Nutty Butter Balls

For the past 6 days I have been cleansing and fasting, so I haven’t had any new posts to share. However, I have been making meals for my hubby, which can be challenging since I’m not eating. I came up with this recipe on the fly to create a healthy snack for my husband to enjoy, and to share with my readers. These snack balls remind my husband of the old candy favorite the PayDay Bar, or a Nutter Butter Cookie, because of the nutty sweet and salty taste. I love creating all kinds of raw nut balls – but you knew that already. They’re easy, nutritious, and delicious! Enjoy! Here’s the recipe for my Nutter Butter Balls:


Ingredients:
3 cups mixed nuts (almonds, cashews, walnuts, pecans)
1 cup mixed dried berries and raisins (blueberries, cranberries, cherries, golden raisins)
¼ cup dried organic peanut butter powder
1 tsp pink Himalayan salt
12 pitted Medjool dates
1 T cacao nibs
Preparation:
Place nuts in a food processor and ground to a powder. Add dried berry mix, powdered peanut butter, and pink salt, and continue processing until well blended and crumbly. Add dates and cacao nibs and process until well combined and dough like. Remove from processor and place in a large bowl. Using a cookie scoop or large spoon, scoop dough and roll in your hands to form a ball. Put aside, and continue this process until all the dough is used. Ready to serve, or store in an air-tight container, preferably in the refrigerator.
Serving Suggestions:
I placed dark chocolate covered blueberries inside 1/3 of the balls as a surprise. Yum!
