Here’s another great tasty cookie snack that doubles as a protein bar bite. These balls are super rich in flavor, and quite filling. Have them for breakfast, dessert, or a snack. Just do your best not to eat them all in one sitting. Enjoy!
Ingredients:
1 cup almonds
½ cup cashews
½ cup walnuts
½ cup dried blueberries
½ cup dried cranberries
¼ cup coconut
1 T cacao nibs
¼ cup vegan chocolate chips
¼ cup hemp protein
1 T lucuma
1 T vanilla extract
10 dates
¼ tsp pink Himalayan salt
drizzle agave
Preparation:
Place nuts in a food processor and finely grind. Place remaining ingredients in the processor, adding the dates last. Continue to process until well combined, sticky, and dough like. Remove from the food processor into a bowl. Using a spoon or cookie scoop, take small amounts of the dough and form a ball. Do this for all the dough. Store balls in an air tight container in the refrigerator for up to 2 weeks.
