Here’s a recipe for some super moist, flavorful brownie bites that have no chocolate in them at all. I use carob, mesquite, and raw honey to create the texture of these delightful balls. These bites are also great for use as a protein bar. You could easily use this recipe and double it to make delicious cup cakes or a cake base. Top them off with some yummy raw chocolate avocado frosting. Enjoy the recipe!
Ingredients:
2 cups walnuts
¼ cup pine nuts
1/3 cup mesquite
¼ cup carob
½ tsp pink Himalayan salt
½ tsp vanilla extract
2 heaping tsp raw honey
2 T Sacha Inchi protein powder (optional)
28 dates
Preparation:
Using a food processor, finely grind nuts. Add remaining ingredients, saving dates for last. Process again until well mixed, sticky, and dough like. Remove from processor and pour into a bowl. Using a spoon or cookie scoop, take scoop size quantities of the dough, place in your hands and form and roll into small bite-size balls. Do this for all the dough. Place in air tight containers, and store in the fridge for up to two weeks. These bites are super moist and have the flavor of molasses. Yum-yum!
