Salads are one of my favorite things to eat on a daily basis. I always include delicious leafy greens, something sweet, and something crunchy. One of my favorite greens to use is kale. There are several varieties. This recipe includes red kale, paired with apples, pecans, and dried fruit. It’s simple, hearty, nutritious and delicious. Enjoy!
5-6 thick red kale leaves stemmed and chopped into strips
2 red delicious apples cored and chopped into small pieces
1 cup chopped pecans
1/3 cup dates pitted and finely chopped
1/2 cup golden raisins
1 T or more balsamic vinegar
Mix well and let marinate. Ready to serve.
