Swiss Chard Salad with Apples and Pecans

Swiss Chard is one of the most vitamin and mineral rich super greens you can eat! Swiss Chard is also one of the most vitamin and mineral rich greens you can eat. Chard is an excellent source of vitamin K, vitamin A, vitamin C, magnesium, manganese, potassium, iron, vitamin E, and of course, dietary fiber. In addition, Chard is also a great source of calcium, copper, vitamin B1, vitamin B2, vitamin B6, folate, protein, phosphorus, niacin, and zinc. Because of the “super” rich source of vitamins and minerals, Swiss Chard is a great food to eat to maintain eye and bone health, digestive health, and prevent a variety of cancers, including skin cancer and colon cancer. Chard is rich in antioxidants too since it’s an excellent source of vitamin C. Swiss Chard is a super energizer, since it’s a great source of protein and iron.
Great ways to eat more Swiss Chard is by using it as a wrap, greens to your smoothies, and my favorite – in a salad. Here’s a delicious salad recipe using Swiss Chard as the featured green. Enjoy!
Ingredients:
1 large bunch (about 6-8 leaves) fresh white Swiss Chard
1-2 handfuls fresh herb salad mix
1 handful fresh sprouts or micro herbs
2 large apples (mixed variety)
1/2 cup raisins
1/2 cup raw pecan pieces
drizzle hemp oil
drizzle balsamic vinegar
Preparation:
Rinse chard leaves, and trim off ends. Chop leaves and add to a large bowl. Core and seed apples. Cut into small slices and add to bowl. Add herb lettuce, micro herbs, raisins and pecans. Toss well. Drizzle hemp oil and balsamic vinegar, toss again until well combine. Makes 2-4 servings.
