For the past two weeks I’ve been consuming mostly smoothies for my meals. At least 2 out of every 3 or 4 smoothies in a day is a green smoothie. Green smoothies are a great way to take in your greens that contain all the necessary minerals and additional nutrients needed to thrive. One of my favorite combinations has to be pineapple and coconut. It’s the main ingredients in a piña colada less the rum. This green smoothie recipe is super refreshing, and reminds me of a more tropical version of the old mix drink favorite. Enjoy!
Ingredients:
1 young Thai coconut (flesh and water)
1 cup pineapple chunks
juice of 1 large orange
1 cup spinach
2 dates
1 T vanilla extract
few drops vanilla stevia
1 T coconut oil
ice
water as needed
Preparation:
Combine all ingredients in a high-speed blender and mix until super smooth.
