Golden Ginger Apples are a variety of yellow apples that have a mild sweet flavor, with a sharp tart finish. These apples are great for making apple pie with. They also pair wonderfully with the Lacinato Kale, an Italian flat leaf kale that is slightly sweeter and more delicate than curly kale. Other names for this kale are Dinosaur and Italian Kale. Kale is one of the most highly nutritious dark leafy greens you can consume. It does a body good! This salad is filling, energizing, refreshing, not bitter, and full of flavor. Ingredients:
10 leaves or more Lacinato kale (chopped)
1 cup mixed baby herb lettuce
½ to 1 cup baby spinach
1 Ginger Gold Apple (cored, seeded, and chopped)
1/2 cup large golden raisins
1 cup chopped pecans
pinch sea salt
drizzle raw agave nectar or raw honey
several drizzles balsamic vinegar
Preparation:
Combine all ingredients in a large mixing bowl except for salt, agave nectar and vinegar, toss well. Add remaining ingredients and toss again – it’s ready to serve.
