The Sauce.
Ingredients:
1 cup pumpkin seeds
¼ cup pine nuts
1 cup fresh basil
1 cup fresh flat leaf parsley
1 red bell pepper (seeded and chopped)
¼ cup EVOO
1T minced garlic
2 tsp pink Himalayan salt
1 tsp garlic powder
juice of ½ lemon
½ an avocado (peeled and stoned)
¼ cup water (more or less depending on desired thickness)
Other Ingredients:
Kelp noodles
Fresh herbs and lettuces
Preparation:
Combine all sauce ingredients in a food processor or high speed blender and mix until smooth and creamy. Pour over fresh kelp noodles and mix well. Serve over a bed of fresh herbs and lettuce, and top with fresh herbs.
